Tried a recipe posted by a friend some time ago. Looks really good and it sure tastes as well as it looks. This recipe takes about 30 minutes to complete for a noob cook like me. :)
Ingredients required for this dessert:
- 1 pack of Konnyaku premix jelly powder 250g (makes about 32 jelly)
- 3 tsps of Osmanthus
- 3-4 tbsp Wolfberries (soaked in water)
- Water chestnuts cut into small cubes (you may add other fruits or anything you like)
- 1250ml of water
- Place about 4-5 wolfberries into each of the jelly mould. Do likewise for the cubed water chestnut.
- Boil 1250ml of water in a pot.
- When boiled, turn to low heat and add Osmanthus.
- Let it simmer for about 3-5 mins.
- Pour the Konnyaku premix jelly powder gradually into the boiling water stirring at the same time until the powder is fully dissolved. Turn off the flame.
- Pour the jelly solution into each of the jelly mould; let it cool before placing the jelly mould into the refrigerator to set the jelly. *When the jelly cooled, the mould already set. So you might want to arrange the wolfberries and water chestnut while it is going to be cooled.
